Welcome back to What I Ate Wednesday….er, Thursday? Yea, I messed up. I had this post halfway done and ready to go yesterday, and planned to finish it after work but got distracted by cute leggings at TJ Maxx, and then my super sweet boyfriend grilled me up some Whole30 approved dinner, and the rest is history.
Any other Alchemists out there? How is this challenge going for you? I am doing pretty damn awesome, if I do say so myself. I was looking over the Whole30 Timeline yesterday, and realizing that I am experiencing 0% of what people normally experience. No day 2/3 “hangover”, no irritability, maybe just a little hungrier than normal. Which is making me feel really, really good about my usual diet. I know I was dabbling in some foods I shouldn’t have been (ahem, quinoa), and eating too much chocolate (yes, even Honey Mamas should be eaten sparingly), but other than that, switching to Whole30 has made little to no difference in my eating habits. I’m guessing this is why I’m not experiencing common symptoms – my body doesn’t have to detox from the processed food, alcohol, gluten. and refined sugars that a typical person eating the SAD has built up in their systems. THIS is why I advocate for the paleo diet – even if you’re not doing it perfectly – because life is about BALANCE, after all – you’re still giving your body so much more nutrition and so much less crap on a day-to-day basis!
One thing I am struggling with is my caffeinated drinks. I am trying not to drink coffee, or no more than 1x per week, because I have a food sensitivity to it and I know it upsets my digestion. So my normal substitution is mtacha – but it’s so, so bitter on its own. Yes, I could blend in a date, but that’s still a lot of sugar. And I think I finally found a good solution today – coconut water! I blended my matcha with 1 cup coconut milk + 1 cup coconut water and it’s actually pretty darn good! Not nearly as sweet as I’d normally drink it with honey and/or stevia, but that’s the whole point – to retrain my taste buds not to need things to be so. dang. sweet. Try it!
Now on to WIAW!
As usual I started by day with a mug of hot water + 1 Tbsp apple cider vinegar and 1 tsp l-glutamine.
I drank that while I made my breakfast smoothie – The Blueberry Cacao smoothie from the Alchemy meal plan. I used frozen coconut milk ice cubes instead of regular ones. It was HUGE, I had trouble finishing it.
After my smoothie I had to run to my appointment with my naturopath. When I got home from that, I made myself an iced coffee with cold brew, coconut milk, and I blended in a date. I know, I know, we aren’t supposed to do that on Whole 30. But unsweetened coffee is gross, and I’m limiting myself to 1-2 coffees per week right now, so it won’t be a daily thing. I drank my smoothie and coffee out of my Healthy Human, cause it’s the best.
I also grabbed a handful of dried apricots and pecans before heading to the office.
For lunch, I had the Tuna Waldorf salad from the Alchemy plan, I subbed the tuna for chicken, and a sliced apple to dip.
After work I snacked on some zucchini hummus with a sliced bell pepper. You guys, this zucchini hummus is giving me LIFE! It is sooo good and I can’t even tell it’s not made with chick peas!!
For dinner I has some leftovers of my Balsamic Roasted pork with veggies, and I sauteed some greens with ghee and garlic on the side! This recipe is so bomb, I’m super excited to share it with you guys!! Also, this may be the ugliest food picture I’ve ever shared. This is what real life and leftovers look like – not styled or fresh. But still delicious.
Lastly, I’m trying to kick my dessert habit, but it’s still week 1 and I NEED something sweet at night! Luckily I’m feeling totally satisfied opting for a piece of fresh fruit. Tonight I had a sliced peach with coconut milk – my Whole30 version of peaches and cream!
