Balsamic Roasted Pork with Veggies (Whole30)

Ingredients
  • 2lb boneless pork loin
  • 1/4cup olive oil
  • 3Tbsp balsamic vinegar
  • 3cloves garlic, chopped
  • 1tsp sea salt
  • 1/2tsp pepper
  • 1/2tsp onion powder
  • 1Tbsp thyme
  • 1large sweet potato, chopped
  • 1large purple potato, chopped
  • 1lb baby carrots
Instructions
In the oven:
  1. Preheat oven to 450F.
  2. In a blender or food processor, combine olive oil, balsamic vinegar, garlic, salt, pepper, and onion powder. Process until smooth.
  3. Rub 3/4 of the mixture over the pork loin on all sides, then place the pork loin in a large baking dish or roasting pan. Sprinkle about 1 tsp of thyme over the pork loin, then place in the oven and bake for 15 minutes.
  4. In a mixing bowl, toss the remaining 1/4 of the balsamic mixture with the chopped potatoes, baby carrots, and the remaining 2 tsp of thyme. After 15 minutes, remove the pork from the oven and place the potatoes in the dish around all sides of the pork.
  5. Reduce the oven temperature to 350F, and place the pork and potatoes back inside. Roast for an addition 40-50 minutes. Remove the pan from the oven and allow everything to cool for about 10 minutes before serving.
In a crockpot:
  1. In a blender or food processor, combine olive oil, balsamic vinegar, garlic, salt, pepper, and onion powder. Process until smooth. Rub 3/4 of the mixture over the pork loin on all sides, then place the pork loin inside the crockpot. Sprinkle about 1 tsp of thyme over the pork loin,.
  2. In a mixing bowl, toss the remaining 1/4 of the balsamic mixture with the chopped potatoes, baby carrots, and the remaining 2 tsp of thyme. Place the potatoes in the crockpot around all sides of the pork.
  3. Cook everything on low for 8-10 hours.
Recipe Notes

This recipe can be made in either the oven or the crockpot. I prefer oven roasting it if I have the time, but it tastes just as good in the crockpot when I need something easy.
