Holy crap. I think the day I made this granola will go down as one of the best days of my life. Or at least the last month.
I. Frickin. LOVE. Granola. It never disappoints – crunchy, sweet, satisfying. It’s the best. I always have some of my homemade Paleo Grain-Free Granola in the house, but my traditional recipe uses honey and maple syrup. The last 4 weeks I’ve been doing a nutrition and fitness challenge at my gym called the Alchemy 365 Challenge. The nutrition guidelines are very similar to Whole30 – which meant no more honey or syrup for 4 weeks. Sad panda. I was missing my gronola like crazy, which is how this beautiful baby came to be, and I am so proud of it. It’s not quite as sweet as my regular granola, and you don’t get as many yummy clusters, but it’s still awesome, especially after having no granola for WEEKS. YES!!!
On another note, I’m really feeling good today, for a few reasons. First of all because I’ve only had like 2 coughing attacks and I’m starting to feel like I have functioning lungs again. But the 2nd reason is because despite not seeing much change in my body over the last few week of this challenge, I am seeing so much progress in my fitness ability. I was feeling a little put-out that my measurements haven’t budges at all, but today’s workout was a doozy – 50 abmat situps/30 curl + press/10 burpees, then 50 curl + press/30 burpees/10 situps, then 50 burpees/30 situps/10 curl+press. Initially when I walked in the gym I saw those numbers of burpees and thought “I’m screwed, there’s no way I can do 50 crossfit burpees, I’m going to have to modify and cut out the chest-to-floor”. I got my first 10 done just fine. Then came the set of 30, which sucked but I got through it. When I got to 50 my arms were already so tired, but I just kept focusing on sets of 10 at a time. And guess what? I did all 50, with only a 10 second rest half way. No modifying. No stopping every 5 reps. I got through it – and I promise you, there is no way I would have been able to do that 4 weeks ago. So let this be a reminder that just because you’re not seeing results on the scale/measurements, that DOES NOT mean you aren’t making progress! Chances are your workouts are becoming easier, you’re running faster/further, or lifting heavier that you were a few weeks ago. Keep going.
And go make this granola.
