Grain-Free Granola [Whole30 Friendly]

Ingredients
  • 1/2cup unsweetened coconut flakes
  • 1cup almonds
  • 1cup walnuts
  • 1cup pecans
  • 1/2cup pumpkin seeds
  • 6 medjool dates, pitted
  • 1Tbsp coconut oil
  • 1/2cup unsweetened dried cranberries
  • 1Tbsp cinnamon
  • 1tsp sea salt
  • 1/2cup hot water
Instructions
  1. Preheat oven to 300F. Line a baking sheet with parchment paper.
  2. Place the pitted dates in a bowl and cover with hot water. Allow these to soak while you prep everything else.
  3. Place the almonds, walnuts, pumpkin seeds, and pecans on a food processor, and pulse in 1-2 second intervals until everything is chopped. Add the coconut flakes and pulse a few more times. Remove from the food processor into a separate bowl.
  4. Drain the dates and place into the food processor. Blend on high until a paste is formed, adding 1-2 tablespoons of water if needed. Add the cinnamon, coconut oil, and sea salt, the blend an addition 10 seconds to combine.
  5. Add the nut mixture to the food processor, and pulse a few times to fully combine the nuts and date paste.
  6. Spread the granola mixture out evenly across a baking sheet. Bake for 20-25 minutes, stirring about every 5-7 minutes to prevent anything from burning.
  7. Remove from the oven and mix in dried cranberries. Allow the granola to cool before serving.
