I don’t think I can ever make these cookies again – they were gone in less than a week. And I live alone. Oops. I fricken love oatmeal raisin cookies. So much that I’m often willing to eat oats just to have them. But lately oats have been making me suuuuuper sick, like within 30 minutes. It’s a cruel world. So naturally this meant I needed to make a grain-free version, and I’m obsessed with these. They are soft, chewy, textured, with just the right amount of sweetness. I want to eat them every day. And I did. Which is why they were gone 6 days later, and now I am sad. Extra sad because I used the last of my almond butter perfecting this recipe, and now I cannot make any more. WHY ME? I also really wanted to call these “faux-tmeal” cookies but realized I probably think I’m funnier than anyone else does.
Moving on from my cookie addiction… who out there lives in Portland?! My mom and I are traveling there in May to celebrate mother’s day + my birthday and I literally want to consume as much delicious gluten-free/dairy-free/paleo food as I possibly can. And also check out some of the local fitness studio because I’m going to need to burn off some of that food consumption.
