Paleo “Oatmeal” Raisin Cookies

Ingredients
Wet ingredients:
  • 1cup almond butter
  • 1large egg
  • 1Tbsp coconut oil, melted
  • 2Tbsp maple syrup
  • 1tsp vanilla
Dry ingredients:
  • 1/2cup coconut sugar
  • 2Tbsp tapioca flour
  • 2Tbsp coconut flour
  • 1tsp baking powder
  • 1tsp cinnamon
  • 1pinch salt
  • 2/3cup unsweetened coconut flakes
  • 1/2cup raisins
Instructions
  1. Preheat oven to 350F. Line a baking tray with parchment paper or grease.
  2. Add wet ingredients to a bowl and mix well. In a separate bowl, combine all dry ingredients except raisins.
  3. Add dry ingredients to wet ingredients and mix to form dough. Using a spatula, fold raisins into dough.
  4. Place small balls of dough (about 1-2 Tbsp) onto baking sheet. Bake for 10-12 minutes until golden.
  5. Remove from oven and allow to cool for 1-2 minutes. Gently press down on each cookie to slightly flatten and create crinkles.
