It’s already Wednesday! This week (and month) is flying by. Especially since April seemed to take for-ev-er. And I came down with a pretty brutal cold for the last 4 days, so I was basically laying around being a blob for 4 days straight. But I leave for Portland tomorrow!! I’m super excited, but also pretty bummed because it’s literally supposed to rain all day, every day while we’re there. I’m going with my mom for a combined mother’s day trip, and also to celebrate my upcoming birthday. Our plan is for me to get up and go try a fun local gym in the morning while momma sleeps in, then go eat alll the gluten/dairy free food PDX can offer, and visit some of the pretty gardens! I’m going to try my best not to be a Debbie Downer, but rain on vacation bums me out so bad. Every trip I’ve gone on since I met my boyfriend, we’ve encountered unnatural amounts of rain. We once visited the Utah dessert and broke the ANNUAL rainfall average in the 8 days we were there. Then I went to San Diego about a week later, where the weather is supposed to be perfect all the time, and a huuuuge storm rolled through. They were using snow plows to plow sand from the beach off the freeways. WTF. So I’m really hoping the weather predictions are wrong, and we can get at least one nice day.
I’m also pretty nervous about staying on track with the Alchemy Challenge while I’m traveling. I don’t want to totally ruin the progress I’ve made in the last week and a half and go on a total binge, but I also want to be able to enjoy my trip, and by enjoy I mean I really want a gluten free pancake and a slice of birthday cake. My plan is to take everything day by day – if I really want a piece of birthday cake, I’ll split one with my mom, and maybe decline dessert the rest of the days. And pick a day to have pancakes, but have eggs and veggies the rest of the days. I’m trying not to let it create more stress than it needs to.
Part of my alchemy challenge is my personal goal to only have coffee once or twice a week. This is because I tested positive for a food sensitivity to coffee, and I have not been feeling well recently. That means my morning caffeine is usually coming from matcha. I normally sweeten my match with stevia or a small amount of honey, but since neither is allowed on the challenge, I’ve been struggling with finding ways to enjoy my morning matcha. One fool-proof way I’ve come up with is to add it to my morning green smoothie, if I’m having one for breakfast. That way it’s lightly sweetened by the fruit in the smoothie, and the matcha flavor blends beautifully with the other greens. This Matcha Green Smoothie has been my go-to a few times a week!
