Happy black friday you crazy shoppers! Did you go out shopping this year? I have personally never gone. I like to describe myself as an outgoing introvert, but I am still an introvert through-and-through, and crowds drive me coo-coo-bananas. It was suuuper busy at target last weekend and I freaked the f*** out. I had to park in the very last space of the parking lot, which was nuts because my Target is in a mall and the parking lot is gigantic. That’s when I knew it was going to be bad in there. And just being around all those people wandering all willy nilly all over the place, stopping directly in your way, ran into you, and all that fun stuff put me in a terrible mood. Terrible enough that I hit the rock gym for some stress relief and pushed myself way too hard, and ended up injuring myself. So I stay far, far away from the stores today. I am always down for a good online sale, though, so if you guys know of anything good you should definitely let me know. I’m actually trying to get my hands on a good 70m rope, so keep your eye out!
How was everyone’s Thanksgiving? I somehow managed to stuff myself to the point of pain. Not that I’m trying to brag or anything – it’s so unhealthy and I’m not really sure what even happened, because I only ate 1 plate + a piece of pumpkin pie, but it sucked. I felt like garbage the rest of the day/evening. I did not eat paleo, so maybe it was just all the grains that killed me. I did of course stay gluten free and dairy free, but I allow myself to stray a little bit from my paleo diet on holidays and when traveling. Because my mom made gluten free stuffing and baked wild rice and I HAD TO have it!
Adam and I leave for Costa Rica on Monay!! I’m so excited, but also a little worried because there’s some crazy storms and sh*t going on down there, and it’s looking like a loooottt of rain. I swear it just rains on us everytime we ravel together, we’re like cursed. We went to Zion NP last year, hoping to climb some things, and it literally rained on us 8/9 days. And not just sprinkles – there wer mudslide, people were getting trapped on hiking trails, drowning in slot canyons, and some climbers even got shot off the wall by a large amount of water that somehow pushed out of the rocks. It was nuts, and everyone kept telling us how “it never rains here!” Well it does when we’re in town. We bring the rain.
I was really hoping to put out some yummy holiday recipes for you guys before Thanksgiving, but life happened and it just didn’t work out. So before I take off to Costa Rica, where I obviously won’t be able to cook much for you guys, I wanted to leave you with the super awesome recipe for a Paleo Strawberry Cheesecake. I adapted this recipe from The Healthy Foodie – so I cannot take the credit for this amazing creation. I made it for easter last year, but it would be a perfect Christmas dessert too! And everyone in my family loved it! Which is always a win since I’m the only one who eats paleo / has food allergies in the family, so I always worry my creations won’t live up to their holiday food expectations. A bit of caution to this cake though – it is R.I.C.H. You only want to eat a little sliver at a time. And then, if you’re like me, you give away your leftovers so you can’t be tempted by them after the holidays! 🙂
