Holy crap, hold on to your butts guys, cause this is hand down the best paleo banana bread you will ever make.
I am currently sitting at my computer trying to stop coughing/crying, since I just hardcore choked on the apple and almonds I’m snacking on. I’m also wishing I had been snacking on this banana bread, since it’s pure deliciousness would make the whole inhaling-my-food-on-accident thing so much more tolerable.
I can’t take total credit for this recipe, or even most of the credit really. This as my Grandma’s recipe that my mom made throughout my childhood. When I was diagnosed with Celiac Disease, my mom swapped the flour for a gluten free mix and it was still awesome. After trying a few other blogger’s paleo banana bread recipes, I just wasn’t very impressed to be honest. I missed my mom’s banana bread, it was so much better. And so I decided to try to adapt my grandma’s recipe to be paleo, and this is the majestic result.
It’s just so perfect – soft, moist, sweet, with a strong banana flavor – just how I like it, and just how I remember banana bread tasting as a child.
I used Simple Mills pancake mix for this recipe. I assume other paleo mixes (like Birch Benders or Bob’s Paleo Mix) would work just as well, but I can’t promise that. If you can get your hands on some Simple Mills, I’d recommend using that.
