Ingredients
  • 1/2cup coconut oil(or softened butter if you eat dairy)
  • 1/2cup coconut sugar
  • 1/4cup maple syrup
  • 3large eggs
  • 3 very ripe bananas, mashed
  • 2cups Simple Mills pancake mix(or other paleo baking mix)
  • 1tsp baking soda
  • 1tsp baking powder
  • 1tsp vanilla
  • 1/2tsp sea salt
Instructions
  1. Preheat oven to 350F.
  2. In a mixing bowl, cream together coconut oil (or butter), eggs, coconut sugar, and maple syrup. Add the mashed bananas and vanilla extract, and mix everything well.
  3. Mix together all of the dry ingredients, then slowly add the dry ingredients to the wet, until everything is smooth and combined.
  4. Pour into a bread pan and bake for 60-75 minutes, checking on it after an hour, until an inserted toothpick or butter knife comes out clean.
  5. Allow the loaf to cool for at least 15 minutes before serving. Enjoy!
Recipe Notes

Feel free to add any toppings, like cinnamon or chocolate chips, before you bake the bread.
