  1. Preheat oven to 350F.
  2. Add the coconut oil (or vegan butter), sunflower seed butter, almond butter, sugar, and vanilla extract to a mixing bowl, and cream together until smooth.
  3. Mix the Simple Mills pancake mix and Protein together, then slowly add it to the wet ingredients. Add 2 Tbsp of almond milk or coconut milk to the mixture to add a little moisture, until the dough sticks together but is not runny.
  4. Roll the dough into 1-2 tablespoon size balls and place on a lined baking sheet 2 inches apart. Stick a few dark chocolate chunks into each cookie. This recipe will make about 14 cookies.
  5. Bake in the oven for 10-12 minutes, until golden brown.
  6. Remove and cool at least 5 minutes before servings. Try not to eat the entire pan.
