Happy birthday to me, happy birthday to me, happy birthday dear meeee, happy birthday to me! It’s not actually my birthday. But it was on Monday! So in celebration of me officially being closer to 30 than 20 (sigh), I give you these birthday cake truffles!
A few months ago, I bought my friend some birthday cake truffles from the store for her birthday. I am a HUGE sucker for anything birthday cake – cake, ice cream, truffles, you name it. It’s the best flavor ever. Of course the store bought truffles were full of processed sugar and milk, so I decided to create my own paleo truffles! And these bad boys did not disappoint. The white chocolate outside turned out a bit darker than I’d hoped, since I used paleo powdered sugar made with maple sugar, but if you’d like them to be bright white like a cake, you can always use traditional powdered sugar!
The sprinkles are obviously not paleo, so you can choose to add them or not. I just choose not to live in a world where birthday cake has no sprinkles.
In other news, I am headed in to my last week of the Alchemy challenge / whole30-ish thing I’m doing. I think I’m going to extend the nutrition guidelines somewhat indefinitely – meaning I’m not going to eat a jar of honey the day it ends, tempting as that may be. I’m going to continue eating this way, but allow myself a piece of dark chocolate if I really want it, and maybe start using honey yo make my granola again. I just feel so much better when I’m eating like this, despite suffering from strep + an infection in my lungs right now, I have way more energy that I normally would when I’m sick. Which brings me to another exciting bit of news – I made whole30 compliant granola last night. I’m not totally sure if granola is considered whole30 approved or not, but whatever, this stuff is bomb. Not as sweet as it normally is with honey/maple syrup, and you don’t get the nice clusters, but it’s still so satisfying, since granola was probably the #1 thing I was missing.
But I digress, on to the truffles!
