Ingredients
Truffle Filling:
  • 1/2cup Nikki’s vanilla cake coconut butter(or plain coconut butter)
  • 1Tbsp coconut oil
  • 2Tbsp coconut flour
  • 1Tbsp honey or maple syrup
  • 1tsp vanilla powder
  • fewdrops almond extract
  • 1tsp sprinkles(optional)
White Chocolate Coating:
  • 1/2cup cocoa butter
  • 1Tbsp coconut oil
  • 1/4cup paleo powdered sugar(see ingredients below)
  • 1/2tsp vanilla powder

Instructions
The Truffle Filling:
  1. Add all of the filling ingredients, except sprinkles, to a food processor, and process until all ingredients are fully combined, and a dough forms.
  2. Using a rubber spatula, fold the sprinkles into the truffle filling.
  3. Roll the filling into balls of about 1 tablespoon, and place on a baking sheet lined with parchment paper. Place in freezer for about 10 minutes while you make the chocolate.
White Chocolate Coating:
  1. If you are making paleo powdered sugar, add the maple sugar and tapioca starch to a high-speed blender and blend on high into it is very powdery and combined. This will make about 1 cup of powdered sugar, so you can save the extra 3/4 cup for future baking,
  2. Place a sauce pan filled 1/2 way with water over high heat and bring to a boil. Place another smaller sauce pan or bowl into the water to create a double boiler.
  3. Place the cocoa butter into the smaller pan and melt it completely, stirring often. Once the cocoa butter is melted, add the coconut oil and stir to combine. Mix in the vanilla powder and 1/4 cup powdered sugar. To get the mixture super smooth, pour everything into a blender and blend on high for about 15-20 seconds.
  4. Pour the chocolate back into the sauce pan and turn off the heat. Remove the truffles from the freezer and dip each one into the white chocolate to fully coat the truffle. Place back on the baking sheet, and freeze for about 2 minutes.
  5. Remove the truffles from the freezer, and use a spoon to spoon another coat of chocolate over each truffle.Sprinkle with sprinkles, if desired. Place truffles in freezer for an additional 10-15 minutes.
  6. Remove from the freezer, thaw a few minutes, and enjoy! Store the remainder in the fridge.
